La distillerie Cedar Ridge a été ouverte par Jeff Quint et sa femme Laurie en 2005. En 2009, Kolin Brighton les a rejoints pour superviser le processus de distillation. Seuls des ingrédients locaux sont utilisés, comme le maïs cultivé spécialement s Couleur : ambre brillant. Nez : Epicé, intense, notes de beurre chaud, bois de chêne, clou de girofle, cannelle, vin rouge. Goût : Fruité, juteux, notes de tarte aux pommes, toast au beurre, mirabelles, notes de vin rouge.
